The Magical Castle, Like from a Dream!
Isn’t it just the prettiest thing ever? Makes you want to believe in fairy tales and happily ever after. And you know, whenever I see something this beautiful, I immediately start thinking about food! I know, I know, I’m always thinking about food, but beautiful things just deserve a beautiful dish to go with them!
Thinking of that castle, all sparkly and grand, reminds me of a dish that’s just as special and celebratory: **Rainbow Mochi Cake!** It’s sweet, chewy, and just plain FUN. And the colors? They’re like the fireworks that go off above the castle every night! So bright and happy!
Rainbow Mochi Cake - Recipe
Ingredients:
- 1 box (16 oz) Mochiko Sweet Rice Flour
- 2 cups granulated sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 2 cups milk (or coconut milk for extra flavor!)
- 4 large eggs, beaten
- 1/2 cup melted butter (or coconut oil)
- 1 teaspoon vanilla extract
- Food coloring (red, orange, yellow, green, blue, purple)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan. Make sure you grease it good so the mochi doesn’t stick!
- In a large bowl, whisk together the Mochiko flour, sugar, baking powder, and salt. Get all the clumps out, you know? We want a smooth batter.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract. Mix it real good!
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don’t overmix! Overmixing makes the mochi tough. No bueno.
- Divide the batter into six equal bowls. I like to use a measuring cup to make sure they’re all even. We need those rainbow layers to be perfect!
- Add a different food coloring to each bowl. Stir gently until the color is evenly distributed. Make sure the colors are vibrant!
- Pour one color of batter into the prepared baking pan. Spread it evenly.
- Bake for about 8-10 minutes, or until the top is just set. You don’t want it to brown too much. We want to see those colors!
- Pour the next color of batter on top of the first layer. Spread it evenly.
- Repeat the baking and layering process with the remaining colors. Bake each layer until just set before adding the next.
- After the last layer is added, bake for an additional 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let the mochi cake cool completely in the pan before cutting it into squares. Be patient! It’s hard, I know, but it’s worth it!
- Dust with powdered sugar or toasted coconut flakes for extra prettiness. And then…EAT!
