Speaking of magic and castles, you know what always brings a little bit of enchantment to my day? Baking! And since we’re talking about Disney, let’s whip up some Mickey Mouse-shaped cookies. They’re perfect for a weekend treat or a fun little project with the kids.
Mickey Mouse Cookie Recipe
Ingredients:
- 1 cup (2 sticks) unsalted butter, softened
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- 2 ¼ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- Cookie icing (various colors, for decorating)
Instructions:
- Cream together the butter and sugar in a large bowl until light and fluffy. Beat in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix!
- Divide the dough in half, flatten each half into a disc, wrap in plastic wrap, and chill for at least 30 minutes (or up to 2 hours). This helps prevent the cookies from spreading too much while baking.
- Preheat your oven to 375°F (190°C). Line baking sheets with parchment paper.
- On a lightly floured surface, roll out one disc of dough to about ¼ inch thickness. Use Mickey Mouse cookie cutters to cut out shapes.
- Place the cookies onto the prepared baking sheets, leaving a little space between each cookie.
