Ingredients:

  • 250g Paneer, cubed
  • 2 large Onions, finely chopped
  • 2 large Tomatoes, finely chopped
  • 1 inch Ginger, grated
  • 4 cloves Garlic, minced
  • 2-3 Green Chillies, slit
  • 1 tsp Turmeric Powder
  • 1 tsp Red Chilli Powder
  • 2 tsp Coriander Powder
  • 1 tsp Garam Masala
  • 1/2 tsp Kasuri Methi (dried fenugreek leaves)
  • 2 tbsp Oil
  • 2 tbsp Butter
  • 1/4 cup Fresh Cream (optional)
  • Fresh Coriander Leaves, for garnish
  • Salt to taste
  • For Kadai Masala (Dry Roast & Grind):
  • 2 tbsp Coriander Seeds
  • 1 tbsp Cumin Seeds
  • 1 tsp Fennel Seeds
  • 4-5 Dried Red Chillies
  • 1 inch Cinnamon Stick
  • 4-5 Cloves
  • 4-5 Black Peppercorns

Instructions:

  1. Prepare the Kadai Masala: Dry roast all the ingredients for the Kadai Masala in a pan over medium heat until fragrant. Let them cool completely, then grind them into a coarse powder. This is the secret to the authentic Kadai flavor!
  2. Marinate the Paneer (Optional): You can marinate the paneer cubes with a pinch of turmeric powder, red chilli powder, and salt for about 15-20 minutes. This step adds extra flavor to the paneer, but it’s not essential.
  3. Sauté the Onions: Heat oil and butter in a kadai or a large pan. Add the finely chopped onions and sauté until they turn golden brown. Be patient and let them caramelize for a richer flavor.
  4. Add Ginger, Garlic, and Green Chillies: Add the grated ginger, minced garlic, and slit green chillies to the pan and sauté for another minute until fragrant.
  5. Sauté the Tomatoes: Add the finely chopped tomatoes and cook until they soften and release their juices.
  6. Add the Spice Powders: Add turmeric powder, red chilli powder, and coriander powder to the pan. Sauté for a minute until the spices are well combined with the tomato mixture.
  7. Add the Kadai Masala: Now, add the prepared Kadai Masala to the pan and sauté for another 2-3 minutes until the masala is well incorporated and fragrant.
  8. Cook the Gravy: Add a little water (about 1/2 cup) to the pan to adjust the consistency of the gravy. Bring the gravy to a simmer and cook for about 5-7 minutes until it thickens slightly.
  9. Add the Paneer: Gently add the paneer cubes to the gravy and mix well. Be careful not to break the paneer.
  10. Finish with Garam Masala and Kasuri Methi: Sprinkle garam masala and crushed kasuri methi over the paneer. Mix gently and cook for another 2-3 minutes until the paneer is heated through.
  11. Add Cream (Optional): If you like, you can add fresh cream at this stage for a richer and creamier sauce.
  12. Garnish and Serve: Garnish with fresh coriander leaves and serve hot with naan, roti, or rice.
